Tamale PiePosted by luvtocook at recipegoldmine.com 6/7/01 5:51:22 am 1 1/4 cups cornmeal 1/2 teaspoon salt 1 1/2 cups evaporated skim milk 1 cup water 1 pound lean ground beef 1 clove garlic, minced 1 cup onion , diced 1/4 cup green bell pepper, diced 1 cup creamed corn 1/4 cup black olives, sliced 1 cup tomato sauce 1 tablespoon chili powder 1 teaspoon salt 1/4 teaspoon black pepper 1/2 cup Cheddar cheese, shredded Preheat oven to 425 degrees F. For Crust: Combine cornmeal, salt, evaporated skim milk and water in a small saucepan; cook over medium heat, whisking frequently (to avoid lumps) until thick (7 minutes). Remove 1/2 cup of mixture and cover with plastic wrap (if you don't the mixture will harden too fast). Spread REMAINING mixture on bottom and sides of greased 8 inch square baking dish. Bake in oven for 10 minutes. (If you want, at this point you can start making the filling.) Remove. For the Filling: Brown the ground beef, garlic, onion and bell pepper in a large skillet; drain. Add corn, olives, tomato sauce, chili powder, salt, and pepper; mix well. Spoon into cornmeal crust. Drop rounded teaspoons of remaining cornmeal mixture on top of meat; sprinkle with cheese. Return to oven and bake for 15 minutes. Tamale Pie1 onion, chopped 1 pound ground beef 1 bell pepper, diced Dash of pepper 1 teaspoon salt 1 teaspoon chili powder 1 teaspoon garlic powder 1 can whole kernel corn, drained 2 (8 ounce) cans tomato sauce Sauté onion, ground beef and bell pepper until beef loses red color and onion is clear. Drain well and add the corn and tomato sauce. Simmer until thick. Pour into an 11 x 7-inch or 13 x 9-inch baking dish. Masa Topping 1 cup Masa Harina® 1 cup all-purpose flour 3 teaspoons baking powder 2 large eggs 3 tablespoons vegetable oil 1 cup milk Combine all ingredients in a bowl and stir just until blended. Spoon topping in large dollops over the filling. Bake at 400 degrees F for about 45 to 55 minutes, or until filling is bubbly in the center and topping is well browned. During the last 5 to 10 minutes of baking, you can sprinkle lots of shredded cheese (Monterey jack or Cheddar) over the top and let the cheese melt as the Tamale Pie finishes baking. Tamale PieCrust 1 teaspoon chile powder 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup chicken broth or water 1/2 cup lard 1 1/2 cups Masa Harina® Mix the dry ingredients together, then combine them with the chicken broth or water. Beat the lard until fluffy, then beat the Masa Harina® into it. Line the bottom and 2 inches of the sides of a well-greased shallow casserole dish with between 1/8 and 1/4 inch of the dough. Filling 2 cups shredded chicken 2 tablespoons vegetable oil 3/4 cup cream-style corn 1/2 teaspoon salt 1/2 teaspoon black pepper 1/3 cup green chiles, peeled, seeded, chopped 1/2 cup black olives, sliced or minced 1/2 cup grated Cheddar or Monterey jack cheese or a combination of both 2 ounces grated Cheddar or Monterey jack cheese (for garnish) Preheat oven to 350 degrees F. Combine all ingredients. Spoon the filling over the dough, then spread a thin layer of dough on top. The best way to do this is to pat out manageable pieces of the dough and place them over the filling like a patchwork quilt. Place in the oven and bake for 30 minutes.
